What is the characteristics of baking soda?
 The natural mineral form is nahcolite. 
Sodium bicarbonate is also called baking soda and is actually a type of salt. Some popular uses for baking soda are to help baked goods rise, as an antacid to treat indigestion, and as a general household cleaner.

How Does Baking Soda Work?

Baking soda is an alkaline compound that, when combined with an acid, will produce carbon dioxide gas. The small bubbles of carbon dioxide gas become trapped in batter, causing it to inflate, or rise. Common acids used to cause this reaction include vinegar, lemon juice, buttermilk, yogurt, and cream of tartar.

Baking soda will also produce gas upon decomposition caused by heat. No acid is necessary for this reaction to take place, only exposure to temperatures above 80 degrees Celsius (176 degrees Fahrenheit).

When Is Baking Soda Used?

 These batters are not strong enough to hold shape for the length of time that it takes for yeast to create gas. Because baking soda produces gas quickly, it is not necessary to let the batter rise for long periods as with yeast bread.

Baking Soda (Sodium bicarbonate)

  1. Preheat oven to 350°F.

  2. Line a rimmed baking sheet with foil. Note the weight of the foil-lined baking sheet using a digital scale. Spread in an even layer and place baking sheet in oven.

  3.  The amount of time this can take can vary quite a bit, anywhere from 2 to 5 hours.

  4. Remove from the oven and, when cool, store in an airtight container; be careful not to handle the baked baking soda with bare skin.

    Notes

Do not let the baked baking soda come in contact with your skin, as it is a caustic substance. If you do make contact with the baked baking soda, flush the area thoroughly with water.
